Buster's Bay Restaurant in West Bloomfield closed for business last year, but for those who frequented the dining room, memories of their Buttermilk Biscuits remain! Here is the original recipe to bake a batch. Yield 40.
12 C All Purpose Flour
1/8 C + 1/2T Yeast
1/8 C + 1/2T Baking Powder
3/4 T + 1/2t Baking Soda
2 C Sugar
3/4T + 1/4t Salt
2 C Shortening
5 C Buttermilk
In a large mixing bowl combine all dry ingredients. Break the shortening into small pieces and add to the dry mixture. Allow the shortening to be mixed completely. Add buttermilk but do not mix longer than 1-2 minutes once added or it will make the dough tough.
Set aside and allow to rise to twice its original bulk. Roll dough out to 1/2 inch thickness and cut with a circular cutter.
Bake at 375F for 15-20 minutes or until golden brown and thoroughly cooked.
